Our sustainability goes beyond the plate—our wines are all vegan, low-intervention, and chosen to reflect the soul of the wineries, the carefully collected grapes, and the environment from which it came.
Most of our wines arrive by bike in Copenhagen, and when possible, via the low-emission sailboat Tres Hombres from the Loire Valley etc. The rest are local—Danish wines that may appear in our pairings and always on our list.
We prefer to adapt frequently rather than risk overstocking. At times, we collaborate with the bar to craft custom variations of our wines. Any surplus becomes vermouth, repurposed in our cocktails.
Our carefully curated wine list has awarded us Denmark’s best sustainable wine list from 2023-now and The world’s best sustainable list in 2026.
