Our approach goes beyond the plate. Our wines are vegan and low-intervention, selected to reflect the character of the wineries, the grapes and the places they come from.

Most of our wines are delivered by bike within Copenhagen, and when possible, wines from the Loire Valley arrive aboard the cargo sailboat Tres Hombres. Danish wines also feature throughout our list and occasionally in our pairings.

We prefer to adapt our wine list frequently rather than overstock. When we have surplus wine, we find ways to give it another life, including transforming it into house-made vermouth for our cocktails.

Our carefully curated wine list has been awarded Denmark’s Best Sustainable Wine List every year since 2023 and The World’s Best Sustainable Wine List in 2026.
